Guacamole & Chips

This is the way they make it in Mexico (that is what Chef Marcela says!)  Simple: five ingredients.  I made this today for us while watching the basketball games.  Easy, quick and delicious!

Guacamole
3 organic avocados (about one person)
1/2 onion finely chopped
2 or 3 limes (the more lime juice, the better)
a handful of chopped fresh cilantro
salt

Chips
1 pkg corn tortillas
Safflower oil
Salt

Cut and peel the avocados and smash them in a mixing bowl.  You can make it as smooth or chunky as you like.  Chop the onions and cilantro.  Add the onions, lime juice, cilantro, and salt.  Taste it and see if you need more of any of the ingredients and adjust.

Preheat the oven to 400.  Start with your tortillas piled up and the oil in a little bowl.  Using a brush, lightly oil both sides of the first one and place it down on your baking sheet.  Place another tortilla on top and lightly oil it.  The other side will get some oil from the one underneath.  Do this until you finish the whole pile.  Cut the tortillas into little triangles (slice in half, in half again, and again!)  Bake in the oven for 8 to 10 minutes but keep an eye on them so they come out perfectly.  Take them out and salt them right away because the heat with melt the salt onto the chips.
